Had a couple of those fresh tomatoes still on the vine that I didn't want to waste so I made a Tomato Corn Pie from a recipe in some cooking mag. The rest of the ingredients were either from the pantry, spice rack or refrig' like canned corn, skim milk, cheese, dried thyme, eggs and whole wheat flour and olive oil.

The real McCoy. I think it still looks good enough to eat... and it was! Almost quiche-like but with a fresher taste due to the fresh tomatoes... and I also used a heavier hand with the thyme.
A slice of the pie... as Auntie Marialani might say, "meinz mo bettah"!
