The Campo Grande Iberico products keep popping up on my Facebook feed - so much so that Ms S actually tried to place an order... however, they don't ship to Hawaii... We previously sampled Iberico Bellota Jamon or that luscious salt-cured ham from the black foot pata negra pigs that gorge on acorns before they are processed. The fat literaly just melts in your mouth - I don't know how these pigs don't simply melt while they're alive. Even with the best Proscuitto di Parma or San Danielle, while the fat is also luscious, you can feel the different mouthfeel of the lean and the fat while it's in your mouth. With Iberico de Bellota, the lean and fat are like one on the palate and simply melt in the mouth.
So we did the next best thing - we ordered four different cuts of Iberico pork from La Tienda who does ship to Hawaii including Tenderloin...
End Loin...
Secreto...
And Shoulder Steak...
They arrived still semi-frozen so we thawed the End Loin and placed the rest in the freezer. I then fired up my Weber to do a gentle grill (don't want to lose that luscious fat) and also added a Safeway Select marinated pork tenderloin...
After about 15 minutes...
The Iberico was as good as I remember. We gently microwaved the leftovers though I tried it cold from the refrigerator and the fat was still melt-in-the-mouth delicious even cold! If Campo Grande ships to your locale, I highly recommend placing an order. If not, simply order from La Tienda...
