Champuru



A co-worker gave us some bittermelon from her garden so I had to make some champuru. First core and slice the bittermelon…


Then grate some carrots for sweetness to balance the bitter...


And I know the usual protein is rafute or shoyu simmered pork belly but I decided on simmered, sliced pork loin... simmered for about an hour until it was nice and tender...


Then add the tofu...


Bittermelon…


Then grated carrots...




Finely a couple of tamago...



And voila! Champuru!


Great to have some home grown bittermelon as they are a little expensive in the 50th...
