Prima Bistro in Langley

After shopping at my favorite store in Langley – the Star Store – I perused the menu of Prima Bistro which is located above the Star Store and knew I wanted to dine there. They offer several small plate and plate sharing is encouraged as well as salads, burgers and full sized entrees. They also offer an eclectic mix of wines from France, California and Washington.

We started with the classic Lyonnaise Salad – mainly because I’m a total runny egg slut, Fresh Burrata with Yellow Tomatoes and Crispy Pork Belly with Apricot Mustard. The Lyonnaise Salad was great with its combination of crunchy slightly bitter greens, rich crisp lardons, hearty poached egg balanced by a nice Sherry vinaigrette. The Crispy Pork Belly was crisp on the outside and meaty on the inside and the Apricot Mustard helped cut through the rich pork fat. I normally limit my bacon consumption to a minimum during the rest of the year just so I can indulge in pork belly like this! The Mrs immediately jumped on the Burrata as it isn’t a dish that’s readily available since it’s a fresh mozzarella that needs to be consumed within a several days after production. The balsamic vinegar and vine ripened yellow tomatoes balanced the richness of the cheese.




We were then served the Rockfish and Chips with Fennel Slaw, Pan Seared Sweetbreads with Apricot and Thyme Gastrique and Duck Fat Fried Fingerling Potatoes. The Rockfish was flaky with a good flavor and the “chips” were perfectly cooked shoestring fries. The fennel slaw was the perfect palate cleanser between bites. The Sweetbreads… OMG! It was the hit of the meal. It had a flavor of roasted turkey – so much so that we asked our server if they were seared in turkey drippings. “No”, the chef simply uses clarified brown butter… I still think there was a bit of turkey drippings. The apricot and thyme vinegar reduction was the perfect “sauce” for the richly flavored sweetbreads as a tasty palate cleanser. And of course, who can say “no” to fingerlings fried in duck fat with a garlicky aioli… cholesterol and calories to die for… but since we’re on vacation, they DON’T COUNT!




Would I dine here again? YOU BET! In fact we did just that…
