Mabo Tofu



I'm not sure if it's mabo or mapo but you know how translation goes when it's translated from kanji to english. Anyway since the 3-day is winding down and it's back to work soon, it's time to make the workweek vittles. Since we were dining out quite a lot the past 3 days, time for the healthier options. Do I hear Mabo Tofu calling? What? Pork isn't a great healthy option! No, not really so I'm using 99% fat free ground turkey breast and Mori-Nu Lite tofu.

Most of the local markets have this pre-ground very low fat turkey breast


Chop the mis en place of fresh ginger, fresh garlic, black beans and garlic-chili sauce


Chop the tofu into bite sized pieces


Now brown the turkey in a little canola oil... actually my canola oil was beginning to smell a little like oil based paints so I dumped it and used macadamia nut oil. Since ground turkey doesn't brown as nicely as beef or pork, I simply let those brown bits form on the bottom of the pan then deglazed with shochu.


Add the mis en place and stir



Then add the tofu



And finally add the broth which consists of chicken broth, cornstarch, shoyu, rice wine vinegar and sugar. Once it comes back to a boil and the cornstarch has thickened, turn off and it's ready to serve over hot (brown) rice. Very low animal fat, healthy tofu and no guilt!



Time to drop accumulated calories packed on over the past 3 days...
