Dinner @ Prima



Since Bro was in town last week, we had a family dinner at Prima in Kailua. It's been open for quite some time now and it is in our neck of the woods but despite being accessible to us, we've never dined there. I'm glad that we finally sampled their fare! I started with a Ginger Manhattan that used ginger liqueur for sweetness instead of sweet vermouth and Aperol instead of Angostura bitters. A great combo of flavors!


The Mrs sampled the Prosecco with St Germain elderflower liqueur and club soda. It was served in a little carafe and was a perfect light aperitif to start the meal.


We ordered a bread basket - on this evening the bread was actually made by Chris Sy (who uses Prima's Ferrara oven to bake his bread) and it was served with Naked Cow Dairy's butter in olive oil (I usually just dip my bread in EVOO but butter in EVOO is even better)..


We also sampled a plate of the oven roasted Brussels sprouts with prosciutto (I always love roasted Brussels sprouts especially with a little char).



Along with the Winter Squash Salad with spaghetti squash fritters, acorn squash puree and roasted butternut squash with pomegranate and papaya. A great contrast of flavors and textures.


Mom ordered the Spicy Meatball Pizza


While Bro ordered the special Salami and Broccoli Pizza



And the Mrs sampled the Prosciutto and Arugula Pizza with a poached egg (the heat of that Ferrara oven almost cooked the egg well done)


I begged to differ and selected the Slow Roasted Pork Belly with roasted mushrooms and sauteed chard on mashed potato. I debated between the Sweetbreads and Biscuits but our server said the pork belly had more of a "Wow" factor. It was first sous vide then roasted to char the skin. ONO!



We were much too stuffed for dessert


But you know what? We'll be back in short order to sample the Grilled Octopus... and Sweetbreads... and Tandoori Pear... and Pappardelle with curried Bolognese...
