Along with getting the weekly household chores done and preparing for the upcoming workweek, it leaves just a little tine to cook dinner. So I made a simple pasta - I guess it would be a Linguini al Vongole - or a simple linguini with clams. Of course I found this great dried linguini from Italy that was made with both lemon zest and lemon juice incorporated into the pasta from my local R. Fields wine shop.
First sautéed the canned clams with some minced garlic and olive oil then added a half of chopped onion that I smoked the day earlier for my smoked tomato mayonnaise. Add a little flour to thicken then add the clam juice back into the mix with a dash of lemon thyme and fresh minced chives and voila! Linguini al Vongole.
Of course you do NEED a wine... since I didn't have a chilled Pinot Grigio or Vermentino, I opened a bottle of Nanbu Bijin Shinpaku Daiginjo
Sipped from my new acquisition, a pair of Migaki Meister stainless steel (with gold plated interior) sake cups with a double wall to maintain the internal temperature in the cup. The floral essences of the sake played off of the pronounced lemony pasta while the viscosity of the sake held up to the clams... The pasta doesn't come cheap - ~$11.69 for just under a pound though it feeds four as a pasta course so I feel it's well worth it! Sometimes it's these simple meals that charges your batteries for the impending work week...
