For the past several months, The Pig and the Lady has been offering what they term the "Primal Dinners" which include the protein of your choice along with oysters, pickles, sides and mixed sauces for 6 to 10 diners depending on the protein you select. Starting with the Pork Shank for six for $150 all the way up to the 12 Hr Roasted Beef Brisket or Porchetta for ten for $250. The K's arranged last night's dinner for fifteen of us so we sampled both the 12 Hr Roasted Beef Brisket and the Pig Head (the Pig Head and Braised Pork Shoulder require 24 hour advance reservations). The Le family graciously allowed us to BYOB (when we're allowed to BYOB, we usually leave at least a $10 per bottle extra gratuity) so we started with some bubbly, a Laurent Perrier Rose.
Along with a 2003 Drappier Millesime Canicule
And a Paul Bara Grand Rose
And a 2007 Domaine Carneros Brut
For the Oysters on the half shell
And the Broiled Oysters - I normally only would consider oysters raw but these broiled babies were just as good with a nice hit of lemongrass.
We also uncorked a 2013 Puech-Haut Saint Drezery Prestige Rose
A 2007 Domaine de Vaugondy Vouvray
And a Guigal Condrieu
For the Papaya Salad
Then the piece de resistance arrived tableside, the 12 Hr Roasted Beef Brisket
And the Pig Head
Served with turmeric rice and tortillas along with all the herbal fixins'
And freshly baked biscuits with multiple dippin' sauces
We also uncorked a couple of Pinot Noirs for the Pig Head including a 2006 Foxen Sea Smoke Vineyard
A 2009 Kosta Browne Koplen Vineyard
And a 2006 Littorai Thieriot Vineyard
And for the Brisket we uncorked a magnum of 2003 Domaine Tempier La Tourtine
A 2007 Pedestal Merlot
And a 2009 Shafer Relentless
I can't say which main was better, the brisket was so tender you didn't even need teeth to consume it and with the various sauces mixed with the turmeric rice.... but then again, the crispy, crackly skin on the Pig Head with the rich fatty jowl meat placed in the fresh tortillas with radishes and cilantro... TIE! BOTH were 12 out of 10 SUPERB!
And of course when I thought it couldn't get any better, we're served a Gelato with Summer Truffle. I first thought truffle as in chocolate truffle... no, no, no. The real McCoy as in truffle that lives underground sniffed out by pigs or dogs. Creaminess with the pungent mushroomy, garlic perfume of truffles! 10 out of 10!
And ended the evening with a cocktail, a n Opening Salvo with gin, campari and tonic water.
Another excellent meal from Chef Andrew, staff and family and yes, we'll be back! There still are three other Primal Dinners we Need to sample!
