We were invited to a multi-course prepared and served by my younger Francois brother Monsieur K for an honored guest winemaker who was in town for a the annual holiday wine trade show where all of the local wine distributors gather to sample what they might stock over the holiday season. And the honored guest was none other than winemaker Mia Klein of her own Selene label and consultant to many other wine labels... but that's where life sometimes throws a curve. Mia and her partner caught a bug right before the trade show the previous day so they couldn't make it to dinner that evening...
Since Mia still makes the wines for Bressler, I uncorked a 2002 Bressler Cabernet Sauvignon. Thirteen years old but still with ample ripe fruit and a nice balance...
Since she laso produces Merlot, I also uncorked a 2002 Blankiet Merlot... Of course like a true Einstein, I never took another photo after unwrapping the bottle...
We started the evening with a glass of Paul Bara Brut Reserve - a tribute to the man who recently passed on...
Along with a bottle of Bollinger Rose... in tribute to the new James Bond movie...
Then a tray of cheese and salumi...
Starting Roasted Butternut Squash Soup
And a bottle of 2005 Domaine Ostertag Zellberg Pinot Gris which paired nicely with the soup...
The a Sous vide Egg over Celery Root Puree with Roasted Pancetta...
With a bottle of 1995 Antoine Jobard Mersault-Poruzot which was another great pairing...
Then the Roasted Beet Salad...
With a bottle of Domaine Trotereau Quincy Vielles Vignes... I always love the nose on this wine as it's much more than the usual Sauvignon Blanc grass, pepper and pipi du chat...
And the piece de resistance, Chef K's sous vide Tenderloin with Baby Potatoes and Grilled Asparagus... As tender as steak gets and perfect medium rare throughout the width of the steak...
