Dinner with an Iron Chef


We were treated to an extravagant dinner about 2 weeks ago. The occasion? Well, Iron Chef Palaka is probably donating a dinner for the annual University of Hawaii College of Arts and Sciences fundraiser auction so he wanted to do a test run of his menu. We were instructed NOT to bring any food so along with several wines, we also brought the Mrs latest cocktail fave, the Key Lime Pie Martini courtesy of Nordstrom's Bar.


We then started with Salmon Three Ways with a lomi-lomi salmon on shiso leaf, a sous vide salmon on creme fraiche and a lightly poached salmon on watercress sauce... I LOVE fresh salmon so all three parts were great though the sous vide salmon probably had the lead...


We then moved on to a Tomato Salad featuring heirloom and grape tomatoes splashed with a light vinaigrette and goat cheese... very refreshing!


The Iron Chef also treated us to a bonus course of sous vide A5 Miyazaki wagyu "sushi"... OMG! Meat flavored buttah! Served on freshly milled rice from the Rice Factory...


Then came the Duck Two Ways with smoked breast and sous vide then crisped breast served with sweet potato puree...


Both tsavmain courses paired nicely with both a young 2011 Kosta Browne Koplen Vineyard Pinot Noir...


And an older 2004 Perrot-Minot Vielle Vigne Gevrey Chambertin 1er Cru...


The final main was a Pono Pork pork culotte served with applesauce and fresh corn pudding... now this is what pork is supposed to taste like!



We ended the meal with a Maple Pot de Creme... the perfect ending to a great meal...


So once again, another great meal was enjoyed at Chez K. Whomever wins the bid at the auction is in for one heck of a great meal!
