Today's Negroni variant, The Plume heads in a totally different direction by dropping the gin and adding Cocchi Rosa, licorice flavored Absinthe then topping off with soda water and Prosecco. Not as alcoholic as the traditional Negroni with a pleasing but not overwhelming hit of licorice from the Absinthe, It's almost like a Negroni S'bagliato (which swaps out gin for Prosecco supposed by mistake) with an Absinthe rinse...
