Dinner @ Tokkuri Tei

We had a farewell dinner last night at Tokkuri Tei for one of Ms S's active duty co-workers. Though I retired earlier this year, I worked at the same facility as Ms S and also worked with this out-going soldier. In the military, soldiers are normally assigned a 3 year assignment at a given military facility then PCS (permanent change of station) after 3 years to their next duty station for the next 3 years... unless it's a command position then it's only 2 years. So SPC(P) C is slated for Ft Leonardwood in MO as his next duty station and decided on Tokkuri Tei. This was our first visit since the untimely passing of Chef/Owner Hideaki "Santa" Miyoshi.
Since Tokkuri Tei is an izakaya (Japanese bistro or tapas bar), we started with libations with a Nishida Denshu Tokubetsu Junmai ($18 for 180ml) for Ms S with a medium light body and lots of umami goin' on...
And just a Kirin Light ($5) for me...
We then sampled the Sakekawa Tofu Salad ($12.50 for the small portion) with loads of flaked salmon and kaiware or daikon sprouts over a small block of silken tofu. We both agreed that we'd order this again in a heartbeat...
We then moved on to the Shiitake Nikuzume ($13.50) or shiitake stuffed with chicken and pork served with a white and red sauce and small salad... also very tasty though on the samller side portion wise...
And two small rolls of sushi (futsumaki), the Negitoro ($9.50) or scraped tuna mixed with green onion and the Sakekawa ($9.50) or crispy grilled salmon skin...
Finally, we noshed on the Hamachi Truffle ($19) which was pure hamachi rolled in nori and drizzled with truffle oil - it was also topped with what I think was millet. Ms S originally thought it was konnyaku but it was a lot softer than konnyaku... delicious none-the-less...
And the Pork Ginger ($12.50) which was the MOST tender slices of pork we've ever sampled in ANY restaurant.. We both agreed that on any future visit, ordering both the Sakekawa Tofu Salad and Pork Ginger are no brainers as well as the Hamachi Truffle... though there are so many menu items on the 8 page menu that look good... And may you Rest in Love Santa-san...
