Dandelion Chocolate

Earlier in the year when purchasing hot chocolate mixes for Ms S (Valentines Day gift) from Dandelion Chocolate, I came across baked goods on their website which included the Chocolate Gateau Basque and Cacao-Fruit Gateau Basque but when I inquired about shipping, the baked items weren't shipped to the 50th. However, when I went back to the website just before the holidays, Hawaii was included albeit for a $50 overnight charge. And because I usually consume a whole chocolate panettone in December (Ms S usually just has a small bite), tried scaling back on consuming other rich desserts no matter how good they appeared. Well, 2 weeks before Christmas, a friend I've known since the 3rd grade (over 55 years) suddenly and unexpectedly crossed the rainbow bridge. So we placed an order for both Gateau Basque.
The Chocolate Gateau Basque is made with Dandelion's own 70% Camino Verde pastry cream sitting in basically a chocolate shortbread crust...
And because IMHO, 70% cacao solids is the perfect concentration of cacao, this was my favorite... the pastry cream is like a slightly lighter cheesecake ...
Ms S loved the Cacao-Fruit Gateau Basque which was a vanilla pastry cream - again like a slightly lighter cheesecake - over cacao fuit cooked down to a jelly consistency surrounded by a buttery crust...
Of course, just because the Chocolate was my fave, it doesn't mean I didn't also like the Cacao-Fruit... maybe these Gateau Basque may replace my annual holiday panettone...
